Bread isn't toxic to hedgehogs the way avocado or chocolate is. It's just nutritionally useless — empty calories that displace better food and tend to cause loose stool. The traditional “bread and milk” offered to wild European hedgehogs by well-meaning gardeners is one of the most common preventable causes of hedgehog illness, which is why every UK wildlife group actively campaigns against the practice.

Why

Bread is mostly carbohydrate, with some protein and small amounts of vitamins. None of it is harmful in tiny amounts, but none of it fills a nutritional need a hedgehog has. A pea-sized piece of bread displaces a pea-sized piece of better food.

The combination most often offered — bread soaked in milk — is worse than either alone. The bread is empty calories, the milk causes lactose intolerance issues (see the cheese entry), and together they're notably worse than the “treat” framing implies.

Processed baked goods (cookies, cake, pastries) add sugar, fat, and often other ingredients (chocolate, nuts, raisins, citrus) that are actively toxic. Don't.

Signs to watch for

Most accidental bread ingestion is harmless beyond loose stool for a day or two. Watch for diarrhea lasting more than 48 hours, refusing water, or lethargy — call a vet if any of those appear.

If your hedgehog has eaten a baked good with potentially toxic ingredients (chocolate, raisins, macadamia nuts, citrus), call a vet immediately regardless of how small the amount.

Can hedgehogs eat crackers?

Skip them. Plain crackers are nutritionally similar to bread (empty calories) and most have added salt — which is significant at hedgehog body weight.

What about pasta?
